- Drizzle the chuck roast with a little olive oil then season with salt, pepper, and taco seasoning on each side. In a large pan over medium heat, sear on each side for 3-4 minutes or until there is a slight crust forming.
- Place the seared roast in your crockpot along with the diced onion, garlic, salsa verde, green chiles, bone broth, lime juice, and remainder of the taco seasoning pack. Stir to combine.
- Cover to cook for 4-5 hours on high.
- Once cooked, shred the beef using two forks and stir into the sauce in the crockpot.
- Serve warm over rice with your favorite toppings and enjoy!
