Taco Bake Casserole

Ingredients

• 1 lb ground turkey
• 1 package cooked spanish RightRice
• 1 pack of Siete taco seasoning
• 1/2 red onion, diced
• 1 bell pepper, diced
• 1 cup black beans
• 1 cup frozen corn
• 1 tbsp olive oil
• salt, to taste
• 2 cups mexican shredded cheese
• cilantro, for garnish

Instructions

1. in a dutch oven or large pot, cook the turkey on high heat, once brown and no longer pink, drain and bring back to the pot.
2. add 1 tbsp olive oil, diced bell pepper, and onion to the ground turkey. sauté on medium-low heat for 3-5 minutes.
3. season with salt and add the frozen corn and black beans, sauté for 1-2 minutes
4. add the siete taco seasoning and cook according to the package. turn the heat to low and bring to a simmer.
5. add the cooked RightRice and stir to combine
6. place the meat mixture in a casserole dish, top with cheese and cook on 350 for 10 minutes
7. serve with fresh cilantro and enjoy!
