- Prepare the dressing. In a bowl or blender, combine olive oil, white wine vinegar, Dijon mustard, honey, lemon juice, garlic, parsley, rosemary, thyme, salt, and pepper. Whisk or blend until smooth.
- Prepare the salad. In a large bowl, combine chickpeas, northern beans, cherry tomatoes, cucumbers, red onion, capers, dill, and parsley. Season with salt and pepper. Drizzle with the honey dijon dressing and toss to combine.
- Set aside and refrigerate for at least 30 minutes.
- Serve cool to enjoy!
