One-Pan Chicken Taco Bake

  1. Preheat oven to 400 degrees.
  2. In a baking dish, add 1 cup rice, canned corn, bell pepper, bone broth, salsa verde and about half of the taco seasoning. Stir well to combine.
  3. Add the chicken to the baking dish and top with the rest of the taco seasoning and season with salt and pepper. Dredge the chicken into the broth and then cover the baking dish with foil.
  4. Place the baking dish in the oven to bake for about 35-40 minutes.
  5. After about 40 minutes, remove from the oven and remove the foil. Shred the chicken with two forks and mix it into the rice. Top with sliced corn tortillas and spray with a little avocado oil then top the entire dish with shredded cheese.
  6. Place in the oven to bake for an additional 10 minutes.
  7. Once the cheese is melted and bubbly and the tortillas are slightly golden brown, remove from the oven and serve warm with your favorite toppings and enjoy!
