Pineapple Grilled Chicken Bowls

Instructions
- Prepare the chicken. In a large bowl, combine 1/4 cup olive oil, 2 minced garlic cloves, 2 tbsp coconut aminos, 2 tsp grated ginger, 2 tbsp honey, 1 tsp smoked paprika, 1 tsp oregano, and 1 tsp cumin. Whisk well to combine.
- Season the chicken thighs with salt and pepper and place in a baking dish, bowl, or plastic bag. Cover with the marinade and set aside for a minimum of 30 minutes.
- While the chicken marinates, prepare the pineapple salsa. In a large bowl, combine diced pineapple, mango, bell pepper, onion, cilantro, and lime juice. Season with salt and cumin. Mix well to combine.
- Prepare the chicken. Grill, cook over the stove or bake in the oven. I prefer grilling for this recipe. To grill, light the grill. Sear and cook the chicken on each side for 4-8 minutes or until the internal temperatue has reached 165 degrees.
- Once the chicken is cooked, slice and serve over rice with pineapple salsa, guacamole, and fresh cilantro.
- Serve immediately and enjoy!
