- Prepare the dressing. In a bowl, combine 3/4 cup mayo, 1 tsp dijon, a splash of banana pepper juice, 2 tbsp red wine vinegar, 1 tsp oregano, 1 tsp garlic powder, salt, and pepper. Stir until smooth and set aside.
- In a large bowl, add the chopped chicken and cover in the dressing with an amount to your liking. Add the tomatoes, red onion, provolone cheese, and banana peppers. Mix well to combine
- Serve chilled and enjoy with your favorite potato chips - I like salt & vinegar chips with this!
