Greek Unstuffed Tomatoes

- Preheat the oven to 400 degrees.
- In a cast-iron skillet over medium-hight heat, brown the ground beef, seaon with salt and pepper, and drain any excess grease.
- Once the ground beef is finished cooking, add about 2 tbsp olive oil, rice, and diced white onion. Saute for about 2-3 minutes.
- Add in your diced tomatoes, fresh dill and parsley, stir to combine and taste to season with more salt and pepper to your liking. Note: add more olive oil as you cook if needed. Saute for another 1-2 minutes.
- Once the flavor is to your liking, turn the heat off and pour in two cups of water. Stir to combine.
- You can bake this uncovered or covered with foil. I personally like the top to get a little crispy so I bake uncovered. Place the skillet in the oven to bake for 30 minutes.
- Once cooked and the rice is fluffy, remove from the oven and stir. Top with fresh herbs and serve warm to enjoy!
