- Set aside the butter, mayonnaise, milk, and Boursin cheese to bring to room temperature.
- Score each potato, then place them in a large pot of cold salted water and bring to a boil. Cook until fork-tender.
- Once soft, drain the potatoes and let them cool slightly, then peel.
- Press each potato through a potato ricer (or a mesh strainer if you don’t have one).
- Add the melted butter and salt to the riced potatoes. Gently mix to combine.
- Gradually stir in the warm milk, a little at a time, until smooth.
- Add the chicken stock, mayonnaise, minced garlic, and Boursin cheese. With the heat on low, stir until everything is fully combined and creamy.
- Taste and adjust seasoning if needed. Serve warm and enjoy!
