Creamy Mashed Potatoes

  1. Set aside the butter, mayonnaise, milk, and Boursin cheese to bring to room temperature.
  2. Score each potato, then place them in a large pot of cold salted water and bring to a boil. Cook until fork-tender.
  3. Once soft, drain the potatoes and let them cool slightly, then peel.
  4. Press each potato through a potato ricer (or a mesh strainer if you don’t have one).
  5. Add the melted butter and salt to the riced potatoes. Gently mix to combine.
  6. Gradually stir in the warm milk, a little at a time, until smooth.
  7. Add the chicken stock, mayonnaise, minced garlic, and Boursin cheese. With the heat on low, stir until everything is fully combined and creamy.
  8. Taste and adjust seasoning if needed. Serve warm and enjoy!
