Lemon Dill Nourishing Soup

- In a large pot over medium heat, drizzle olive oil and add diced onion, and garlic. Season with salt and pepper to taste. Sauté for 3-4 minutes.
- Add the diced celery and carrot. Season with salt and pepper to taste.
- Pour in the bone broth and stir to combine. With an immersion blender, blend the soup ingredients until smooth. Pour in 1 cup of uncooked rice and juice of two lemons. Stir and cover to bring to a simmer to cook the rice until tender, about 15 minutes.
- Once the rice is cooked, uncover and stir in the diced rotisserie chicken. Taste and season more if needed.
- Garnish with the fresh dill and more lemon juice if desired. Serve warm and enjoy!
