One Skillet Cheesy Taco Bake

- Preheat the oven to 400 degrees.
- In a cast-iron skillet over medium-high heat, brown the ground beef, season with salt and pepper, and drain any excess grease.
- Once the ground beef is finished cooking, add about 1 tbsp olive oil, diced bell pepper, diced red onion, and diced tomatoes. Sauté for about 1-2 minutes.
- Season with taco seasoning, salt, and pepper. Mix well to combine then pour in the uncooked rice and sauté for another 3-4 minutes.
- Once the flavor is to your liking, turn the heat off and add in the cilantro and mix well to combine. Pour in two cups of broth. Stir to combine.
- You can bake this uncovered or covered with foil. I personally like the top to get a little crispy so I bake uncovered. Place the skillet in the oven to bake for 25 minutes.
- After 25 minutes, remove the skillet from the oven, stir, and top with shredded cheese. Place the skillet back in the oven to bake for an additional 5 minutes.
- Once cooked and the cheese is melted, remove from the oven. Top with fresh cilantro and serve warm to enjoy!
