One Skillet Cheesy Taco Bake

  1. Preheat the oven to 400 degrees.
  2. In a cast-iron skillet over medium-high heat, brown the ground beef, season with salt and pepper, and drain any excess grease.
  3. Once the ground beef is finished cooking, add about 1 tbsp olive oil, diced bell pepper, diced red onion, and diced tomatoes. Sauté for about 1-2 minutes.
  4. Season with taco seasoning, salt, and pepper. Mix well to combine then pour in the uncooked rice and sauté for another 3-4 minutes.
  5. Once the flavor is to your liking, turn the heat off and add in the cilantro and mix well to combine. Pour in two cups of broth. Stir to combine.
  6. You can bake this uncovered or covered with foil. I personally like the top to get a little crispy so I bake uncovered. Place the skillet in the oven to bake for 25 minutes.
  7. After 25 minutes, remove the skillet from the oven, stir, and top with shredded cheese. Place the skillet back in the oven to bake for an additional 5 minutes.
  8. Once cooked and the cheese is melted, remove from the oven. Top with fresh cilantro and serve warm to enjoy!
