- Preheat oven to 400 degrees.
- In a cast iron skillet over medium-high heat, cook ground beef, breaking it into small pieces. Once cooked, drain any excess grease.
- Add the diced tomatoes and taco seasoning. Stir well to combine. Cook for 1–2 minutes, then set the meat aside.
- Drizzle enchilada sauce on the bottom of the skillet, then top with a tortilla. Spread enchilada sauce over the tortilla, sprinkle with cheese, and add a layer of taco meat. Repeat the layers two more times. Finish with a tortilla, enchilada sauce, and cheese on top.
- Place the skillet in the oven and bake for about 5 minutes, until the cheese is melted.
- Switch the oven to broil and cook for an additional 3–5 minutes, until the top is golden and slightly crispy.
- Remove from the oven, top with cilantro, cut into wedges, and serve warm.
