  1. Preheat oven to 400 degrees.
  2. In a cast iron skillet over medium-high heat, cook ground beef, breaking it into small pieces. Once cooked, drain any excess grease.
  3. Add the diced tomatoes and taco seasoning. Stir well to combine. Cook for 1–2 minutes, then set the meat aside.
  4. Drizzle enchilada sauce on the bottom of the skillet, then top with a tortilla. Spread enchilada sauce over the tortilla, sprinkle with cheese, and add a layer of taco meat. Repeat the layers two more times. Finish with a tortilla, enchilada sauce, and cheese on top.
  5. Place the skillet in the oven and bake for about 5 minutes, until the cheese is melted.
  6. Switch the oven to broil and cook for an additional 3–5 minutes, until the top is golden and slightly crispy.
  7. Remove from the oven, top with cilantro, cut into wedges, and serve warm.
